Dinner Week 1 Accomplished

So 4 1/2 hours later, I have 2 bags of Pineapple Chicken, 48 mini meatloaves, enough chicken nuggets for 2 dinners, 1 batch of garlic mashed potatoes, 2 bags of cauliflower, 2 servings of broccoli mac and cheese, and a chuck roast in the crock pot for creamy beef enchiladas. All of that equals 8 full meals!!!!! I also cleaned the kitchen, showered, packed a few 100 calorie snack packs for myself (I found the info here, another Pinterest link), and made a batch of sassy water (Pinterest again, here) and packed the children for their first day of daycare tomorrow. I am TIRED!

There are a few things that I would have done differently...

1. I would have started much earlier in the day. The roast would have been finished in time for me to prepare the creamy beef enchiladas and the mashed potatoes would have had time to cool and sit in the fridge for me to make leftover parmesan mashed potato patties.

2. I would have done more of the prep work before I started. I thought that I would save myself time if I tried to do it while something else was cooking.

Next time, I will be more prepared.
